Homemade Marshmallows
Yields: 24 Servings
Prep Time: 60 Minutes
Ingredients:
- 4 1/2 Quarts Hot Water
- 6 Cups Sugar
- 6 Tbsp Gelatin
- 2 1/2 tsp Cream of Tartar
- 4 Tbsp Lemon Juice
- 1 tsp Kosher Salt
- Powdered Sugar, for dusting
- Cooking Spray
Directions:
In a large pot, mix sugar, gelatin, and cream of tartar and stir with a wooden spoon until sugar is dissolved. Turn heat to high. Monitoring with a candy thermometer let the sugar come to a soft ball state (240 degrees). This stage can be determined by dropping a spoonful of the hot syrup into a bowl of very cold water. In the water, use your fingers to gather the cooled syrup into a ball. If it has reached soft-ball stage, the syrup easily forms a ball while in the cold water, but flattens once removed from the water. Remove from heat and cool to room temperature. Pour into mixing bowl and add lemon juice and salt. Beat on high speed until it thickens and turns white. Spray a jellyroll pan with cooking spray and fill with marshmallow mixture. Dust with powdered sugar and cut into squares. The powdered sugar will help keep the marshmallows from sticking to the knife. Enjoy by themselves, with graham crackers and chocolate for s'mores, or place on a stick and dip in melted chocolate for a delicious lollipop!
